Noodsy's Breakfast Burrito Bomb

What you'll need:

3 Large Brown Eggs
2-3 Yukon Gold Potatoes
4 Slices of Microwavable Bacon
1 Large Soft Tortilla
3 Tablespoons Milk
1 Stick of Butter
Shredded Sharp Cheddar Cheese
Franks Hot Sauce
Large Skillet w/cover
Medium frying pan

The potatoes will take the longest to cook, so start by cutting them up into 1 cm cubes - we're going for homefries not hashbrowns.  Heat up 1/3 stick of butter in large skillet on medium-low heat.  Let butter completely melt, pan is hot enough when bubbles and sizzling starts happening.  Add potatoes.  Mix and make sure the butter is evenly coating the potatoes. Place the cover on and come back in 5 minutes.

Prep your eggs.  In a medium bowl, scramble 3 large brown eggs with 3 tablespoons of milk.  Alton Brown says a tablespoon of milk for every egg and I'm surely not gonna be the one to argue with that man's logic: God-like.  ANYWAYS - I like a little pepper in my scrambled eggs and I usually add it prior to cooking.  Also prep your bacon.  Cut up microwavable, fully-cooked strips into 1 inch sections.  

Check and flip homefries again.  Repeat process.  Covering will help steam and soften up the inside of the homefries while the outside will become crispy.  Once you stop seeing moisture gather on the inside of the cover (did i mention it should be glass?), take the cover off and finish crisping up homefries to desired taste. 

When you're close to done cooking your homefries, start heating a small or medium pan on low heat with a 1/4 stick of butter.  Add eggs when butter starts to sizzle and bubble.  Keep on low heat while constantly (but slowly) stirring.  When the eggs start to thicken up, crank heat up to medium-high and keep those eggs moving.  It doesn't take long for them to cook and usually if they look done in the pan they are overcooked on the plate.  Keep 'em a little runny and you'll thank me later.  

Put the homefries and eggs in separate bowls and cover.  Keep in the microwave until we need them again in a minute.

Wipe out the grease in the large skillet with a paper towel and bring the heat down to low.  Toss large tortilla in and start browning one side. After about a minute, flip tortilla over and cover second side with shredded sharp cheddar cheese.  Add a drop of water and cover (steam will help the cheese melt faster.)

After cheese melts, remove tortilla, and heat up bacon for 30 seconds over medium heat.  Toss in the eggs and homefries for a quick reheat while mixing all ingredients together.  Dump mix onto tortilla (cheese side up of course) and add Franks Hot Sauce to your liking.  Roll up burrito and get ready to surf that couch - you're not gonna be exercising anytime soon.

Serves: ONE gargantuan belly

Recommended drink: Coke or Mountain Dew.
